My good friend Chloe made these for a party once, and I had to have the recipe. They are deliciously rich, chocolatey cookies with a kick of heat. I decided to make them this year for our Cinco de Mayo party, for which they seemed appropriate. The recipe is as follows:
1 stick butter
1 egg
1 tsp. tequila
1/2 cup sugar
1/2 cup brown sugar
1 cup flour
1/2 cup cocoa powder
1/2 tsp. baking soda
1/2 tsp. cayenne pepper
1/4 tsp. salt
1/2 cup mini chocolate chips
Mix dry and wet ingredients separately, and then combine. Roll into small balls and coat with sugar before placing on pan. A single chocolate chip can be placed atop each one for presentation if desired. Bake at 350 degrees for 10-12 minutes. Cool on wire racks.
Ingredients, ready to go. I especially appreciate the inclusion of tequila in these, to make them truly Mexican!
This time around, I put half of the cayenne in the cookie and the other half in with the sugar. This adds a nice cayenne-colored dusting to the cookies, and the heat hits your tongue a little faster. Play around with the cayenne amount in these, but know that 1/2 tsp. does give them some heat.
Chocolate balls rolled and coated with the sugar-cayenne mixture.
Finished product! Just as I requested this recipe from a friend, whenever I serve these I always get asked for it by at least one other person. This is a unique and winning recipe!
